Ok so this is the recipe I use for sweet potato falafel, everyone loves it 6- 8 sweet potatoes, grated 2-3 red onions, in long slices 1-2 cans of chickpeas, mashed with a cup of gram flour/other glute free substitute a LOT of paprika (to taste) Maple syrup/honey to taste
Mix it all up, shape into balls
Pop those bad boys in the oven for 10-20 minutes (depending on size) voila
